Low-Carb, Spicy Thai Chicken & Basil Recipe

My husband and I have close friends who were missionaries in Thailand for many years. They invite us over for the most delicious Thai meals! I modified one of their recipes to make a low-carb version. This dish is so versatile with your choice of meat, and it’s one my whole family loves. We even spent 10 days in Thailand ourselves on a brief missions trip with our friends.

INGREDIENTS

  • 1.5 pounds minced or thinly sliced chicken, beef, turkey or pork
  • 3 tablespoons of coconut oil
  • 4-5 cloves of garlic
  • hot chilies or Thai peppers to taste (my kids don’t like spice so I cut peppers and serve in fish sauce for those who want to add spice)
  • 3 cups basil leaves (holy basil, cinnamon basil, purple basil or Thai basil)
  • 3 tablespoons Tamari soy sauce (I use organic)
  • 1.5 tablespoons fish sauce – Here is a link to my favorite – Red Boat Fish Sauce. It doesn’t contain any sugar and it’s good quality.
  • I tablespoon Organic Date Syrup Please note that this does add 15g of carbs, but this is for the whole meal so divide by 4 per serving. If you prefer less carbs you can add 1 more Tablespoon of fish sauce and about 20 drops of monk fruit sweetener.
  • cauliflower rice
  • optional garnishments – crushed peanuts or almonds, fried egg and lime juice

Directions: Crush chilies or Thai peppers together. Put coconut oil in a wok and add peppers and garlic once hot. Stir-fry until garlic is golden. Add the meat and cook until browned. Add Tamari soy sauce, fish sauce and date syrup and stir-fry for 1 minute. When meat is cooked, add basil leaves and stir fry for 30 more seconds. Serve on top of cauliflower rice and add optional garnishments. I am on a paleo diet, so I don’t use crushed peanuts, instead I use crushed almonds, a fried egg and a little lime juice. Serves 4.
