“I don’t even like Salmon” Mediterranean Salad in Nori Wrap

Growing up I joked about hating fish so much that I said I wouldn’t eat them, swim with them or have them as a pet! I didn’t start eating fish until about 6 years ago and that was only once in a great while. After my cancer diagnosis in 2016 I really made nutrition an important part of my healing journey. Wild-caught Alaskan Salmon is packed with healthy Omega 3’s so I wanted to add it into my diet but I just didn’t like the Salmon taste! My Nutritionist gave me this delicious recipe that blends the Mediterranean flavors with none of the fishy taste. I added some additional ingredients to make it a nutrient-dense, power-packed meal.

Artichokes and Lemon are fabulous detoxifiers. The Basil is a great anti-cancer nutrient and Holy Basil is known for it’s healing properties in ayurvedic medicine. Quality Olive Oil has been shown to be chemopreventative against breast cancer https://pubmed.ncbi.nlm.nih.gov/24114487 and avocados are loaded with fiber and potassium. Nori wraps are a great sea vegetable that contain loads of iodine for thyroid health as well as fiber.

INGREDIENTS:

  • 1 Can Wild Alaskan Salmon (Always buy BPA free cans – here’s my favorite Wild Planet, Wild Alaska Pink Salmon)
  • 1 Cup of Basil (I grow organic Holy Basil, or Tulsi, in my garden and I freeze it so I have it all winter)
  • 2 Tablespoons Olive Oil (Always buy quality Olive Oil with the red seal NAOOA certified quality – I buy mine at Aldi)
  • 1 Lemon
  • 1 Avocado
  • 1/2 Cup Artichoke Hearts (I get mine marinated in water because the oil marinades are usually inflammatory)
  • 6 Olives
  • 1 Tablespoon Capers
  • 1/4 tsp Pepper
  • Mixed Lettuce
  • 4 Sushi Nori Wraps

Directions: Mix together Salmon, Avocado, Olive Oil, Artichoke, Olives, Capers, Pepper and Basil. Zest the Lemon and then juice it. Add the Lemon Zest and juice to the Salmon. Serve on top of lettuce on a nori wrap. Servings size 2 wraps. Total Servings 2. Calories 391/ Protein 20g/ Fat 29g/ Carbs 18g/ Fiber 11g.
